    I made this for my mother's day brunch and got rave reviews. My moms have been bragging to friends since. They even took pictures. The best part is it tasted as good as it looks and the cucumber was easier than I expected. It stands right up on its own. We substituted feta for bleu-cheese for some.

    This recipe is great: ease, taste, and presentation excel. Agree with another reviewer, my cukes did not make big enough rings either, but the slices are so moist they hold up well. Made with the dressing as described and got rave reviews on that too. Very pretty and tasty too.

    This salad is so impressive. It's rather tasty, too. Was not difficult, just a little time required to make it look as pretty as possible - worth the effort for a nice dinner party you want to make an impression for.

    I made this for 9 people. They loved it! I waited till the end to add the Blue Cheese (5 with, 4 without). Everyone said it was a great presentation and looked so fancy. Definite Do Again!
