Bacon Aïoli

Yield 1 1/4 cups


  • 5 slices bacon
  • 1 garlic clove, chopped
  • 1/3 cup egg substitute
  • 2 tablespoons fresh lemon juice
  • 1/2 cup vegetable oil

How to Make It

  1. Cook bacon in a large skillet until crisp; drain on paper towels, reserving 1 tablespoon drippings. Crumble bacon.

  2. Process reserved bacon drippings, garlic, egg substitute, and lemon juice in a food processor until smooth, stopping once to scrape down sides. With processor running, pour oil through food chute in a slow, steady stream. Stir in bacon.
