Bacon and swiss Quiche

  • 1 pound(s) Bacon
  • 4 eggs
  • 4 egg yolks
  • 1 1/4 cup(s) milk
  • 2 cup(s) heavy cream
  • 1 teaspoon(s) salt
  • 1/2 teaspoon(s) pepper
  • 1 teaspoon(s) dry mustard
  • 1 dash(es) nutmeg
  • 3 cup(s) swiss cheese grated
  • 2 9 in deep dish pie crusts


Fry bacon and allow to cool on paper towel.

Preheat oven to 350*F

Beat eggs and yolks together. Gradually blend milk, cream and spices into eggs. When mixed, stir in cheese.

Sprinkle bottom of pie crust with crumbled bacon. Pour in egg/cheese mixture and bake in pre-heated 350*F oven for 35-40 minutes until firm in the center.

Makes two 9in quiches.
