We shaved carrots with a vegetable peeler to add color and flavor to our Baby Kale Salad. Serve with our homemade dressing or your favorite store-bought dressing.

Ingredients

Baby kale or spinach leaves
Oil
Vinegar
Salt
Pepper
Prepared salad dressing (optional)
Carrots

Preparation

Toss baby kale or spinach leaves with oil, vinegar, salt, and pepper (or your favorite prepared salad dressing). Add carrots, shaved with a vegetable peeler, for color and flavor.
