Baby Banana Bundt Cakes with Vanilla Caramel Glaze

  • 1 stick(s) butter softened
  • 3/4 cup(s) sugar
  • 1/4 teaspoon(s) Kosher salt
  • 1 medium banana
  • 2 eggs
  • 1 teaspoon(s) vanilla
  • 1/4 cup(s) milk
  • 1 cup(s) flour
  • 1/2 teaspoon(s) baking powder
  • 1/2 teaspoon(s) cinnamon
  • 2 tablespoon(s) butter
  • 2/3 cup(s) light brown sugar
  • 1 teaspoon(s) vanilla
  • 1 tablespoon(s) milk


  1. Cake:

  2. 1. Preheat oven to 350 degrees. Grease and flour the mini bundt pan.
  3. 2. Cream together the 1 stick of butter and salt.
  4. 3. Mash banana well and beat with eggs, add to butter mixture along with the 1tsp vanilla and 1/4 cup milk.
  5. 4. Stir in the baking powder and cinnamon into the flour, to ensure even distribution, then add to the mixing bowl.
  6. 5. Mix until the mixture is creamy in constistency.
  7. 6. Dollop into the mini bundt pans, fill 3/4 full and smooth tops with the back of the spoon.
  8. 7. Bake 20-24 minutes. (22 minutes is really about right)

  9. Glaze
  10. Add the last 4 ingredients to a small non-stick skillet over med-high heat.
  11. Keep stirring the sugar will melt quick. The glaze will start to bubble up. Remove from the burner when it has thickened. Allow to cool a couple of minutes before glazing the banana cakes.
