Ingredients
- 2 avocado Chopped
- 1 cup(s) Red quinoa
- 1 Med tomato Chopped
- 1/4 cup(s) red onions Diced
- 2 Basil leaves Crushed
- Dressing
- 1/3 cup(s) Extra virgin olive oil
- 1/4 teaspoon(s) Cayenne
- 1 clove(s) Garlic Minced
- 2 Limes Juiced
- Sea salt & pepper To taste
Preparation
- In a small saucepan, bring two cups of water to a boil add rinsed quinoa. Cover and simmer for 15-20 min. Cool and set aside. Mix dressing ingredients together in a small bowl. Mix all other ingredients in a large mixing bowl & then add cooled quinoa. Toss with dressing, chill serve.
