How to Make It

Step 1

Dissolve unflavored gelatin in cold water; stir well. Dissolve lime-flavored gelatin in boiling water; stir well. Combine gelatin mixtures, stirring well; chill until consistency of unbeaten egg white.

Step 2

Combine avocado, mayonnaise, and whipped cream; gently fold into gelatin. Pour into a lightly oiled 4 1/2-cup ring mold; chill until firm.

Step 3

Unmold on lettuce leaves, and fill center with Chicken Salad.
