Made this with the Meyer Lemon dressing & it was OUTSTANDING. We had it in winter with fresh citrus but it would be an excellent summer salad as well. Crisp & refreshing- will make again & again.
Avocado-Citrus Salad with Meyer Lemon Vinaigrette

Yield: Makes 6 servings
- 2 Ruby Red grapefruit
- 2 navel oranges
- 9 cups baby greens
- 2 avocados, cut into 1/4-inch wedges
- Meyer Lemon Vinaigrette
- Peel and section the grapefruit and oranges.
- Divide greens evenly among 6 chilled salad plates. Arrange citrus sections and avocado over greens; drizzle with vinaigrette.
