Another quick and easy side. My husband loved the flavor of this. I followed the recipe to a T, but it was initially really bland. I added a tad more salt and pepper and it made a world of difference. I also threw in some sliced mushrooms, still had great flavor.

Very refreshing and delicate salad which goes so well with the Dirty Rice and Chicken recipe. I can image pairing it with some other dishes that need a special compliment.

Quick and delicious. I opted for 2 tablespoons of lime juice and 1 tablespoon of oil in my dressing; still tasted great.
