Avocado BLT Burgers

Avocado BLT Burgers

Ingredients

  • Onions
  • 1 teaspoon(s) canola oil
  • 1 large onion, halved & thinly sliced
  • 2 tablespoon(s) low-sodium beef broth
  • 1 tablespoon(s) minced garlic
  • 1 tablespoon(s) chipotle Tabasco
  • 1 tablespoon(s) balsamic vinegar
  • 1 tablespoon(s) brown sugar
  • Burgers
  • 1/6 cup(s) minced onion
  • 1/8 cup(s) low-sodium beef broth
  • 1 1/2 tablespoon(s) any combo of fresh thyme, oregano or basil, minced
  • 1/2 tablespoon(s) chipotle Tabasco
  • 1/2 pound(s) ground sirloin
  • 1/2 pound(s) ground chuck
  • salt
  • pepper
  • spray canola oil
  • Fixins
  • 4 burger rolls, cut-sides grilled
  • 8 tablespoon(s) Boursin light spreadable cheese
  • 4 lettuce leaves
  • 4 slice(s) tomato
  • 8 slice(s) avocado
  • 4 slice(s) center-cut bacon, cut in half & cooked til crisp

Preparation

Onions (can be prepped in advance & re-heated)

1. Bring oil to temp in a large skillet

2. Add onion through brown sugar to skillet, stir to combine

3. Cover and cook 15-20min, stirring occasionally until onions are translucent (add more broth or water if needed)

4. When onions are done and most of the liquid has evaporated, remove from heat and reserve (you may have a bit more onion than you need for 4 burgers)

Burgers (best if prepped in advance and refrigerated before grilling)

1. Put minced onions in microwaveable dish with water to barely cover; microwave for 1min

2. Drain and put in mixing bowl

3. To onions add broth, herbs & Tabasco, stirring to combine

4. Add the ground meats to the bowl and combine, avoid overworking the mixture.

5. Divide and form 4 equal patties, using your thumb to indent the center of each

6. Sprinkle with salt & put in fridge, uncovered, for 20-30min

7. Remove, blot both sides dry

8. Grill to medium, sprinkle with pepper and let rest 5min

Assembly

1. Spread 1tbs Boursin cheese on each top & bottom roll

2. On each roll layer lettuce, tomato, burger, onions, 2 avocado slices, 2 pieces bacon

3. Top and serve

note: burger directions called for Zinfandel, not beef broth and fixins called for avocado slices to be brushed with balsamic vinegar & grilled rather than raw
