Aunt Ruby's Sweet Potatoes

Gooseberry Patch

Make your sweet potatoes taste like a delicious dessert with a brown sugar topping.

Yield: Serves 8.

Ingredients

  • 3 cups sweet potatoes, peeled, cooked and mashed
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  • 1/3 cup milk
  • Brown Sugar Topping:
  • 1 cup brown sugar, packed
  • 1/2 cup all-purpose flour
  • 1/3 cup butter, softened
  • 1 cup chopped nuts

Preparation

  1. Mix all ingredients together. Spoon into a greased 13"x9" baking pan. For Brown Sugar Topping, combine ingredients; mix well. Then sprinkle with Brown Sugar Topping. Bake, uncovered, at 350 degrees for 25 to 30 minutes.
