Asparagus with Balsamic Tomatoes

    I used feta cheese (not a goat cheese fan) and LOVED this! My husband and I agreed this is our favorite asparagus recipe yet!

    Followed the recipe exactly and it was delicious - and easy! The tomatoes and balsamic have a bit of sweetness that combines well with the goat cheese. This might also be good on pasta.

    This was quick to make and tasted great. I would consider adding some shallots next time. I cut the asparagus into 1" sections and used chopped plum tomatos. It was a hit in our house.

    Perfect the way it was. I didn't use any cheese to eliminate some extra calories, but I love goat cheese so I know that would have tasted good too. :)

    I liked this recipe okay as is but decided to change it a bit the second time I made it and liked it much better although it isn't nearly as healthy! First of all I coated the asparagus with olive oil, minced garlic and salt and roasted it at 450 degrees for about 10-15 minutes, just to crisp tender. Then I used about a cup of coarsely chopped sun dried tomatoes in oil instead of the grape tomatoes and basically followed the original recipe in the preparation of tomato mixture. I used goat cheese on one half and feta on the other since I have one family member that doesn't like goat cheese, both cheeses are great on this. With my changes I would give it a five star outstanding but it's certainly very good as originally written.

    Most asparagus recipes have bright Sprng flavors. This balsamic glaze and cheese was perfect for a rainy spring night served with steak and mashed potatoes.

    Quick and delicious. I wasn't paying attention when I made my grocery list, so I got fresh goat cheese instead of crumbled but just tossed it with the tomatoes toward the end of cooking. It made a delicious creamy tomato sauce, so not quite the same as the recipe but good nonetheless.

    This was really good. Just beware that it gets strong with the concentration of balsamic and the goat cheese and tomatoes. I served with fish wish was a bad idea as it overpowered the fish. That's not the fault of the recipe however.

    So delicious! We swapped in feta for the goat cheese, and loved it...we've made this twice now, and think the balsamic tomatoes would be a great topper for green beans as well!

    This was very easy to throw together and the balsamic/tomato/garlic combination was incredible and really enhanced the asparagus. I didn't have goat cheese so I omitted that ingredient but I'm sure it would have been a nice addition. However, tonight I tried the sesame-ginger glazed variation and it completely failed because when I microwaved the sauce for 2 min on high (as the recipe said to do) the mixture burnt and hardened to a black solid. It was obviously unservable.

    Amazing! Have made this multiple times. I follow the recipe exactly and it turns out great. My boyfriend doesn't like asparagus too much, so I added a little garlic salt to his and he loved them. Made this for Easter dinner as well, and it was a hit. The goat cheese really gives it that something extra.

    Wow, what a great way to kick up your usual asparagus dish! The tomato/garlic/balsamic combo really adds nice flavor. This dish cooks up quickly so be sure to have your main and other dishes close to finish before starting. I served this with the Spice-rubbed Pork Tenderloin recipe of March 2009 and a brown rice side dish. Delicious!

    We made this recipe because we had asparagus and tomatoes that needed to be used. Roasted the asparagus with garlic and olive oil which was cut into 1 inch pieces for 5 minutes before we added the grape tomatoes and balsamic. The goat cheese was perfect. This was served with grilled rosemary and red wine flank steak and roasted garlic rosemary potatoes. Another wonderful asparagus recipe for spring!

    Not only a beautiful looking dish, a REALLY yummy mixture of flavors and is a very low calorie side. I will definitely make this again!

    So delicious! I used about 1 T. of garlic and reduced fat Bleu cheese crumbles. Excellent side dish for Cedar Plank Salmon with BBQ Spice Rub and Mashed Potato Gratin.

    Wow! Loved this...I usually roast my asparagus, but this sounded good so I tried it. It was super easy and the taste was superb. I followed the recipe as written with the exception of the cheese. I used crumbled feta as that was what I had on hand.

    This was delish, simple and fast to make! I didn't have goat's cheese but used fresh parm instead, as well as caramelized onions. I also just used Roma tomatoes and they were fantastic. I would make this again for sure!

    So easy and delicious. As a time saver I cook the asparagus in the microwave. Sometimes I substitute crumbled gorgonzola or bleu cheese for the goat cheese.

    I followed the recipe exactly except that I steamed the asparagus instead of boiling it. Delicious blend of flavors. I served this alongside CL's herbed stuffed chicken breasts and rosemary roasted potatoes. I will make this again.

    I used feta cheese rather than goat cheese, but otherwise followed the recipe. Not only is it delicious but it looks great. I made it for my family on vacation and they raved about it. The great thing was that it was so easy and fast.

    This made for a nice fresh dinner for a warm LA evening. Since my grape tomatoes were already bite sized, I opted to only cut about half of them in half.     This was a huge hit! Wonderful blend of flavors. Will definitely make this again. Had to warm up the asparagus in the microwave on low power before combining with the other items and serving, but that was no big deal.
