Asparagus with Crispy Pancetta

Dress up plain asparagus by sprinkling with pancetta, often referred to as Canadian bacon, and seasoning with pepper and lemon juice for a fresh taste.

Ingredients

  • 1.5 ounces pancetta
  • 1 pound trimmed asparagus spears
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons fresh lemon juice

How to Make It

  1. Cut pancetta into matchsticks; cook in a nonstick skillet 3 minutes or until crisp. Drain on paper towels. Cook asparagus in boiling water 2 minutes or until crisp-tender; drain. Sprinkle pancetta over asparagus. Season with pepper and lemon juice.
