A quick hit with crispy bacon and shallots under the broiler, and voila! An instant side dish favorite, ready in minutes.
1 pound asparagus spears, trimmed
2 center-cut bacon slices
2 tablespoons thinly sliced shallots
3 tablespoons unsalted chicken stock
1 tablespoon white wine vinegar
1 tablespoon whole-grain mustard
1 teaspoon maple syrup
1/8 teaspoon kosher salt
Est. added sugars 1g
How to Make It
Preheat broiler to HIGH; arrange rack about 4 inches from heating element.
Arrange asparagus on a foil-lined baking sheet. Coat asparagus with cooking spray.
Broil asparagus 10 minutes, stirring once.
Cook bacon in a skillet over medium heat. Remove from pan; crumble. Add shallots; cook 30 seconds. Add chicken stock, vinegar, mustard, and maple syrup; cook 1 minute. Drizzle over asparagus. Sprinkle with salt and crumbled bacon.
My asparagus got a little too brown at 10 minutes - so I'll watch it more carefully next time but all in all this was a fantastic and easy dish. I just tossed the spears in the pan with the sauce (which I simmered down a little longer than 1 minute) and then plated them. Hubby loved it and he's not a huge fan of asparagus.
This sauce was amazing for the asparagus. We did not bake the asparagus, but instead steamed it as we like it better that way since the asparagus turns out a lot more tender. Our full review with pictures is here: http://www.nickandalonakitchen.com/2016/03/pecan-crusted-tilapia-with-garlic.html
