Lemongrass, cucumber, and Asian pear add a note of sophistication to this sweet drink. Be sure to put the pear and cucumber in the blender first.
4 1/2 cups (1-inch) cubed Asian pear (about 3 pears)
2 cups (1-inch) cubed peeled cucumber (1 large)
2 tablespoons fresh lime juice (about 2 limes)
1 (8-inch) stalk peeled fresh lemongrass, chopped
2 (12-ounce) bottles sparkling apple drink, chilled
4 Asian pear slices (optional)
How to Make It
Place first 4 ingredients in blender; process 1 minute or until blended and almost smooth. Strain mixture through a sieve into a bowl, pressing with the back of a spoon; discard solids. Cover and refrigerate 1 hour or until thoroughly chilled.
Pour 1/2 cup pear mixture into each of 4 glasses; top each serving with 3/4 cup sparkling apple drink, and stir gently. Garnish each serving with 1 pear slice, if desired.
