1.In medium bowl, combine cornstarch, sherry, rice vinegar, soy sauce, pepper, and meat. Stir to coat meat thoroughly. Stir in 1 tablespoon oil and let sit 15 minutes to marinate.
2.Break cooked cellophane noodles into small pieces. Place in warm water to soften.
3. Combine sauce ingredients. Bring to boil to liquidate sugar. Set aside.
4. Mix all ingredients for cooking sauce in bowl, and set aside.
5. Heat wok or large skillet over medium high heat. Add 3 TBSP oil, then add meat and stir fry for about 3-4 minutes. Add mixed cooking sauce to pan. Cook until thickened and hot.
6. Prepare accompaniments.
7. Place everything on a large platter and allow each person to make their own wrap.
