Ingredients
- Meat Marinade:
- 1 teaspoon cornstarch
- 2 teaspoons dry sherry
- 2 teaspoons rice vinegar
- 2 teaspoons soy sauce
- pepper to taste
- 1 1/2 lbs ground pork, chicken, or turkey
- 4 tablespoons sesame oil
- Sauce:
- 1/2 cup brown sugar
- 1/2 rice vinegar
- 2-3 T fish sauce
- 1 small chopped red chili
- Cooking Sauce:
- 3 tablespoons hoisin sauce
- 1 tablespoon soy sauce
- 1 tablespoon dry sherry
- 2 tablespoons oyster sauce/ fish sauce
- 2 tablespoons rice vinegar
- 2 tablespoons fish sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- 2 teaspoons cornstarch
- 1 T sweet chili sauce
- 1 teaspoon fresh ginger, minced
- 2 garlic cloves, minced
- Accompaniments:
- 1 (2 ounce) package cellophane noodles, prepared according to package
- bean sprouts
- carrots, julienned
- Peanuts, chopped
- red bell pepper, julienned
- Cilantro, chopped
- 2 green onions, minced
- sugar snap peas, julienned
- water chestnuts, chopped
- 12 leaves butter or bibb lettuce, cups
Preparation
- 1.In medium bowl, combine cornstarch, sherry, rice vinegar, soy sauce, pepper, and meat. Stir to coat meat thoroughly. Stir in 1 tablespoon oil and let sit 15 minutes to marinate.
- 2.Break cooked cellophane noodles into small pieces. Place in warm water to soften.
- 3. Combine sauce ingredients. Bring to boil to liquidate sugar. Set aside.
- 4. Mix all ingredients for cooking sauce in bowl, and set aside.
- 5. Heat wok or large skillet over medium high heat. Add 3 TBSP oil, then add meat and stir fry for about 3-4 minutes. Add mixed cooking sauce to pan. Cook until thickened and hot.
- 6. Prepare accompaniments.
- 7. Place everything on a large platter and allow each person to make their own wrap.
- 8. Enjoy.
