Arugula Couscous

Ingredients

1 cup couscous
2 tablespoons olive oil
1 clove garlic, thinly sliced
1 5-ounce package arugula
Kosher salt and pepper

Preparation

Cook the couscous according to the package directions.

Meanwhile, heat the oil in a large skillet over medium heat. Add the garlic and cook, stirring, for 1 minute. Add the arugula and cook until just wilted.

Transfer to a large bowl. Add the couscous, 1/2 teaspoon salt, and 1/4 teaspoon pepper and stir to combine.
