This was outstanding. I was concerned it would be too "artichoke-y" but the peas really temper and sweeten the dish. I served with Dukkah crusted Halibut and couscous and we devoured it. Easy, different and very good. Loved the lemony goodness with the fish, too. ( And if you aren't familiar, Dukkah is a nut and spice blend, I got mine at Trader Joes, and it's yummy on everything!)

Must love artichokes to enjoy, which I do, but some in my family do not. My daughter and I loved it. Quick, easy, healthy and convenient. Will definitely keep the ingredients in hand for a quick veggie side.

I typically do not like peas and my husband usually won't eat artichoke hearts, but we both ate this up! I omitted the mint as a personal preference and it came out delicious.

This was easy and tasty. Definitely a new, quick way to enjoy artichoke. I had bought a bag of frozen ones from Trader Joe's and this was the perfect recipe for them.
