  • 2 tablespoon(s) olive oil
  • 1/2 Onion chopped
  • 4 teaspoon(s) fresh ginger chopped
  • 2 celery stalks chopped
  • 2 garlic cloves chopped
  • 1 cup(s) cooked chicken breast or tenderloins shredded or cubed
  • 2 cup(s) Uncle Ben's 90 minute Whole Grain Medley
  • 4 cup(s) fresh spinach
  • 4 teaspoon(s) fresh parsley chopped
  • Salt and Pepper


  1. Cook rice according to directions on box. Heat skillet, add onion, celery, ginger and garlic. Cook 1 minute. Add cooked rice, spinach and chicken and toss. Season with salt and pepper and chopped parsley. Serve
