So simple and so delicious! I cooked at 225 for 5 hours. Got rave reviews. Great way to use fresh tomatoes in the winter.

I have tried roasting tomatoes before and it was hit and miss, but these were absolutely wonderful. I used nice roma tomatoes and only had them in the oven for about 3 1/2 hours at 250 degrees, but they were so sweet and juicy. My family, who isn't always thrilled with tomatoes said these had to be made again. I am looking forward to trying this with my home grown heirloom tomatoes next summer.

Delicious! I followed the recipe exactly. Put the tomatoes in the oven overnight. Served these with roasted lamb at Christmas dinner. Everyone loved them!! I'm definitely making this again.

Very good!! I had my doubts but the recipe turned out well. I do not like raw tomatoes but once these were roasted they were terrific. I followed the section re: making them into tomato sauce and plan to use it on my homemade pizza tomorrow. My only wish is that they produced more sauce. It will take alot of them to make a larger amount.

Great way to use up my Roma tomatoes. I imagine it would be great for grape tomatoes as well. I served the tomatoes as a side with Wild Caught Salmon Fillets and Sauteed Green Beans, Cremini Mushrooms and Shallots. Delicious! My husband thoroughly enjoyed the meal as well. I only wish I had made the full batch.

This is the best recipe for roasted tomatoes that I have tried. Other recipes just cook the tomatoes to death. We have a late season bumper crop of tomatoes from the garden that I will put up using the recipe.

This was an instant favorite, and so incredibly easy to make. I made no adjustments to the recipe. Next time, after I buy the tomatoes, I'll leave them out at room temperature for a few days so they can ripen up a bit more before cooking them. The flavors are intense. I served them as a side dish, and used some left overs for home made pizza.

Grand slam! These are the best roasted tomatoes I've ever made and Im just thinking of the long cooking time as a winter house warming. Serving as a side for a party where my friends are bringing hand-crafted pasta. Thrilled!

We don't even like tomatoes and these have become a huge favorite! Super easy to make and the flavor is unbelievable. Great for everything - appetizers, homemade pizzas, chopped up in omelettes, whatever!

These had a great flavor and can be used with a lot of dishes. I also threw in some carrots, cauliflower, and mushrooms half way through cooking (using the same spices and EVOO). Everything was great.
