Apricot-Hoisin Pork Chops with Somen

    Loved this easy recipe! I followed the recipe as written with the exception of two things: I served it over brown rice instead of the noodles and I added about a tsp of crushed red pepper flakes to the sauce. The flavors work perfectly together!

    As a Japanese person, this combination makes me want to run to the nearest hole and hide. I guess if you are non-Japanese and unbiased about how somen should be eaten, go ahead and enjoy....

    Great apricot and hoisin flavors, and the somen and pork paired perfectly together. I would change the presentation however - chop up the pork rather than serving in individual portions, toss together with the sauce and noodles, and perhaps add a few veggies to the dish as well.

    My husband and I enjoyed this recipe. I followed it as written except for adding red pepper flakes and serving over brown rice with edemame. The sauce gave it a yummy sweet heat and something different to do with the pork chops. I don't know if it's worthy of a special occasion, but I gave of 4 stars because of how easy and tasty it was. Will make again.
