1 pound asparagus spears, trimmed
2 tablespoons apricot preserves
1 tablespoon low-sodium soy sauce
1/4 teaspoon minced garlic
1/8 teaspoon salt
How to Make It
Preheat oven to 400º.
Place asparagus spears on a foil-lined jelly roll pan coated with cooking spray. Combine apricot preserves, soy sauce, garlic, and salt; pour preserves mixture over asparagus. Toss well to coat. Bake at 400º for 10 minutes or until asparagus is crisp-tender. Serve immediately.
Prepared as directed. A little sweet for my taste. The combination of soy and preserves was just overly sweet. But, it's a matter of personal preference. I roasted at 400 degrees on top rack for 10 minutes exactly and the spears were perfect. Great way to prepare asparagus, but not my favorite recipe. Will try something else next time.
Easy and delicious way to fix asparagus! I will definitely make it again. I made it just as the recipe said. I used very thin asparagus and 10 minutes was just right. I served it with chicken and dumplings and a salad.
