- 3 cups peeled and mashed apricots
- 1/4 cup Triple Sec or other orange-flavored liqueur
- 1 cup whipping cream
- 2 tablespoons sugar
- Grated rind of 1 lemon
- 1/2 (1-ounce) square semisweet chocolate
How to Make It
Combine apricots and liqueur in a large mixing bowl; stir well.
Beat 1 cup whipping cream in a small mixing bowl until foamy; gradually add sugar, beating until soft peaks form. Fold sweetened whipped cream and lemon rind into apricot mixture.
Spoon apricot mixture into 6 stemmed dessert glasses. Lightly grate chocolate over top of each serving. Chill thoroughly.
