Apricot Dressing

Yield Makes 2 cups

Ingredients

  • 1 (8 1/2-ounce) can unpeeled apricot halves, drained
  • 1 (8-ounce) container sour cream
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 1/8 teaspoon salt

How to Make It

  1. Process all ingredients in a blender until smooth, stopping to scrape down sides. Chill, if desired. Serve over mixed salad greens or fruit.
