Apricot, Cucumber, Pluot, and Lime Basil Salad

    Just ok really. I didn't have the champagne vinegar so used white wine vinegar, and my apricots seemed a bit over-ripe. I liked the cucumber and pluot combination. Maybe nectarines would be better? Not sure I'll make this again because there are plenty of good cucumber salads out there, but if I do, I'll use nectarines instead of apricots.

    Ok, first I'll admit that I substituted everything. Used plums, used nectarines, used thai and regular basil. And rice vinegar instead of champagne. I did have a real english cucumber. The ingredient that makes this salad is the basil! Use lots of it. Other than that, I'd say it was good and a delightfully different way to use up all these cucumbers I have growing. I'm not even sure if I should rate this since I hate it when people change the recipe around :)
