YUM! I made these as mini cupcakes for the class I taught at Pottery Barn. I just added a small dollop of preserves to the cupcake after the frosting and before the coconut. They were so light and the frosting was more like a whipped cream. Again, light and perfect complement to the cake part. Don't skip toasting the coconut. It is wonderful! Will def try as a whole cake.

This was ok- really beautiful to look at, but the flavor was a bit of a let-down. The cake was a little too dense for me, when I felt like it should have been lighter and fluffier. The potential is there, but needs some changes.
