Nice simple glaze that tastes very good. To suit my tastes I added a bit more chipotle. Used part of the glaze on cornish game hens. But I think this would be really good on roasted pork so the remaining glaze is being saved for that.
This recipe goes with Grilled Cornish Game Hens with Apricot-Chipotle Glaze
Yield: Makes 1 1/2 cups
- 1 1/2 cups apricot preserves
- 2 tablespoons golden rum or water
- 1 tablespoon minced chipotle chiles or chipotle-flavored hot sauce
- Combine preserves and rum in a small saucepan over medium heat; bring mixture to a boil. Cook, stirring often, 2 to 3 minutes. Add chipotle chiles, and stir well to combine. Serve warm.
