Apricot Butter

1/2 cup butter or margarine, softened
1/4 cup honey
1/4 cup finely chopped dried apricots
1/2 teaspoon grated lemon rind

Preparation

Beat butter at medium speed with an electric mixer until fluffy; add remaining ingredients, beating until blended. Chill, if desired.
