Really good and easy to make. I used Haagen Dazs vanilla ice cream. The amaretti crust is amazing. I might sprinkle crushed amaretti on top next time. The texture of the whole apricots was kind of strange. Next time I will make a little more of the apricot puree and put half on the crust and half between the ice cream layers.
