Applesauce Snack Cake with Cream Cheese Frosting

  • 3 tablespoons vegetable oil
  • 1/3 cup granulated sugar
  • 1/3 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg white
  • 1 teaspoon vanilla extract
  • 1/2 cup chunky applesauce
  • 1 cup all-purpose flour
  • 3/4 teaspoon baking powder
  • 1/8 teaspoon baking soda
  • 3/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon ground nutmeg
  • Dash of ground cloves
  • 1/4 teaspoon salt
  • Cooking spray
  • Cream Cheese Frosting
  • 1 tablespoon finely chopped walnuts
  • Cream Cheese Frosting

How to Make It

  1. Preheat oven to 350°.

  2. Combine oil and sugars in a large bowl; beat with a mixer at medium speed until well blended. Add egg and egg white; beat well. Beat in vanilla and applesauce. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour and next 7 ingredients, stirring well with a whisk. Add flour mixture to applesauce mixture.

  3. Pour batter into an 8-inch square baking pan coated with cooking spray. Bake at 350° for 22 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 10 minutes.

  4. Spread top of cake with Cream Cheese Frosting, and sprinkle with walnuts. Cut into 9 equal squares.
