  • 4 cups torn curly leaf lettuce
  • 4 cups torn Boston lettuce (about 2 small heads)
  • 8 ounces cubed lean ham
  • 1 small Red Delicious apple, chopped
  • 1/4 cup raisins
  • 3 tablespoons apple juice
  • 2 tablespoons cider vinegar
  • 1 tablespoon light honey mustard
  • 2 teaspoons vegetable oil
  • 1/8 teaspoon freshly ground black pepper
  • 1/2 cup (2 ounces) reduced-fat shredded white Cheddar cheese


  1. Combine first 5 ingredients in a large bowl.
  2. Combine apple juice and next 4 ingredients in a small bowl; stir with a whisk. Pour over lettuce mixture; toss well to coat. Spoon salad mixture onto 4 individual salad plates. Sprinkle 2 tablespoons cheese over each salad.
