Ingredients
- 4 cups torn curly leaf lettuce
- 4 cups torn Boston lettuce (about 2 small heads)
- 8 ounces cubed lean ham
- 1 small Red Delicious apple, chopped
- 1/4 cup raisins
- 3 tablespoons apple juice
- 2 tablespoons cider vinegar
- 1 tablespoon light honey mustard
- 2 teaspoons vegetable oil
- 1/8 teaspoon freshly ground black pepper
- 1/2 cup (2 ounces) reduced-fat shredded white Cheddar cheese
Preparation
- Combine first 5 ingredients in a large bowl.
- Combine apple juice and next 4 ingredients in a small bowl; stir with a whisk. Pour over lettuce mixture; toss well to coat. Spoon salad mixture onto 4 individual salad plates. Sprinkle 2 tablespoons cheese over each salad.
