Ingredients

1 1/4 cups mayonnaise
4 large eggs, lightly beaten
1 teaspoon vanilla extract
3 cups all-purpose flour
2 cups sugar
1 tablespoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1/4 teaspoon baking soda
1 large Granny Smith apple, peeled and chopped

Preparation

1. Whisk together mayonnaise, eggs, and vanilla in a large bowl until smooth.

2. Combine flour and next 7 ingredients in a large bowl. Stir in apple, tossing to coat; stir into mayonnaise mixture. Spread into a lightly greased 13- x 9-inch baking pan. Sprinkle evenly with Crumb Topping.

3. Bake at 350° for 45 to 50 minutes or until wooden pick inserted in center comes out clean.
