Apple Slaw with Blue Cheese

Ingredients

  • 2 large Red Delicious apples, cored and cut into 1/4-inch wedges
  • 2 tablespoons lemon juice
  • 6 cups thinly sliced red cabbage (about 1 1/4 pounds)
  • 6 cups thinly sliced napa (Chinese) cabbage (about 1 1/4 pounds)
  • 1 tablespoon sugar
  • 2 tablespoons water
  • 2 tablespoons cider vinegar
  • 2 tablespoons red wine vinegar
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon celery seeds
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon pepper
  • 1/2 cup (2 ounces) crumbled blue cheese

How to Make It
