Ingredients
- 1 cubed peeled butternut squash (about 1 1/4 pounds)
- 1 1/2 cups apple cider or apple juice
- 1 tablespoon butter
- 1/4 teaspoon salt
- 1/8 teaspoon ground nutmeg
Preparation
- Place squash in a large deep skillet; add apple cider. Bring to a boil; reduce heat and simmer, uncovered, 20 minutes or until squash is tender.
- Add butter, salt, and nutmeg; simmer 3 minutes, stirring occasionally.
