I made these chops for dinner tonight and it was very good! I did use fresh sage, I do not like the flavor of dried sage. and I did not cook the chops on a greased rack. After browning the chops, I placed on a foil lined baking sheet. I think the next time I will simply put the chops in the oven in the same pan I brown them in. I did not use the red pepper because we were out. Still delicious!

Mmmmmm, sooo yummy! I couldn't find fresh sage at our local base commissary so I used dried sage. Added some to the veggies, as well as extra salt and pepper. I only had 2 chops as it's just me and the hubs and two kids who don't eat much, so I put the extra stuffing in a small casserole dish, covered, and put it in with the chops. Hubby said it was really good, daughter really liked it (and I will def. make more stuffing for leftovers next time!), I thought it was pretty good too. I think if I add some sage flavored sausage I will have a winner for our next Thanksgiving dinner!
