Apple Rum Toddy

Ingredients

  • 3 cups unsweetened apple cider
  • 2 tablespoons dark brown sugar
  • 1 tablespoon reduced-calorie margarine
  • 3 whole cloves
  • 2 (3-inch) sticks cinnamon
  • 1 whole nutmeg, halved
  • 6 lemon slices
  • 1/2 cup spiced rum
  • 2 tablespoons amaretto
  • Lemon slices (optional)

How to Make It

  1. Combine first 6 ingredients in a heavy saucepan; bring to a boil, and cook, stirring constantly, until sugar dissolves. Add 6 lemon slices; reduce heat, and simmer, uncovered, 5 minutes, stirring occasionally. Remove and discard cloves, cinnamon sticks, nutmeg, and lemon. Remove from heat; stir in rum and amaretto. Garnish each serving with a lemon slice, if desired. Serve immediately.
