Since I first found this recipe in a 2007 magazine it has become my signature salad. I am asked to bring it to group events often. The fruit, greens, nuts, cheese and sweet/tart dressing add up to a salad that's a perfect complement to a hearty entree. A+++++. Love this salad!
I first tried this recipe at a friend's house and fell in love with it! I could eat this as a meal by itself! Sooo delicious! I made it for my family and they loved it! I will definitely add this one to my recipe collection.
This salad is so good! I've made it as written and also as a spinach salad and both were fantastic! The dressing and the combination of flavors is out of this world! We substituted grated parmesan for the swiss cheese because that's what we had on hand one time and that was great too!
This is an outstanding salad! Everytime I make it people go crazy for it. The combination of the sweet fruits, salty cashews and tart lemon in the dressing make this salad perfect. This is great as a side item with any dish but can be eaten alone as a light meal. It is also a very pretty salad. I made it for a Christmas meal with the red apples and green pears.
