Apple 'n Spice Muffins

    My family and my daycare kids really liked these muffins. I did make a couple changes.. I used Pampered Chef's Sweet Apple Sprinkle and Sweet Cinnamon Sprinkle instead of the cinnamon and I was out of oil so I substituted applesauce. I made these in my mini muffin pan and they turned out great. Will definitely make again.

    My family loved this recipe! I don't usually rate recipes but the other reviews were on the negative side so I almost didn't make it and I don't want anyone else to make that mistake. The muffins were moist and the simple addition of cinnamon-sugar on the top was a nice touch and gave the muffin some texture. I did alter the recipe slightly just to boost nutritional value. I used half whole wheat flour and half white. I also added two tablespoons of ground flax seed.

    Toddler approved. These are great. I love that I had everything on hand (made buttermilk by adding 1 tablespoon of vinegar to the milk) and there is not a ton of sugar. The cornmeal gives these a unique and yummy texture. I used 2 gala apples which only yeilded about 1 1/4 cups but they turned out fine.

    I omitted the ginger, used chopped apples instead of shredded, used yogurt instead of buttermilk, and oats instead of corn meal. Kids loved it!

    My kids liked this recipe. They were able to help make it. My daughter liked the crunchy sugar on top (we used turbinado sugar for the topping). My son liked the apples. I thought that the recipe was okay. The muffins reminded me of zucchini muffins--maybe because of the effect that shredded apple had on the density of the muffin.
