Apple-Kiwi Dressing

Kiwifruit contains enzymes that act as a tenderizer, making it ideal for meat marinades. The zesty fruit flavors of the dressing also pair well with crunchy vegetable salads.

This recipe goes with Grilled Peppercorn Sirloin, Poached Chicken and Asparagus Salad

Cooking Light AUGUST 2005

  • Yield: 1 cup (serving size: 1 tablespoon)


  • 2 tablespoons cider vinegar
  • 2 tablespoons apple juice
  • 1 tablespoon olive oil
  • 1 tablespoon water
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 teaspoon hot pepper sauce
  • 3 kiwifruit, peeled and cut into chunks (about 1/2 pound)
  • 1 small garlic clove


Combine all ingredients in a blender, and process until smooth.

Note: Refrigerate dressing in an airtight container for up to five days; stir well before using.
