Ingredients

1 tablespoon red wine vinegar
2 teaspoons lemon juice
1 tablespoon creamy or crunchy peanut butter (not natural or old-fashioned)
1 teaspoon Dijon mustard
3 tablespoons olive oil
Salt and pepper
4 Belgian endive bulbs, trimmed, halved and thinly sliced
1 medium Granny Smith apple, halved, cored and thinly sliced
2 medium carrots, coarsely grated

Preparation

1. In a large bowl, whisk vinegar, lemon juice, peanut butter and mustard until smooth. Slowly whisk in olive oil. Taste and season with salt and pepper.

2. Add endive, apple and carrots. Toss well and serve immediately.
