Worthy of a Special Occasion

Delicious - rich ginger cookie, and a filling enjoyed even by my Dad who doesn't normally like mince! It was fabulous with praline frozen yogurt, too. Leave plenty of time for cooling, as unmolding early can lead to breakage.
