Let me start by saying that I've never had an apple-avocado salsa. I don't know if this is a thing elsewhere, but I've never seen it nor heard of it. However, I had some leftover avocado and, while this sounded fantastic, I was hesitant to try it. After giving it a shot, I will make this for every chicken taco I ever, ever eat. It was AMAZING. Try it. If you like avocados, apples, a little spice and a bit of tang, you'll love it!

Yield: Makes 3 cups
- 1 Granny Smith apple, diced
- 1 avocado, diced
- 1/2 cup diced red pepper
- 1/4 cup finely chopped red onion
- 1/2 jalapeño pepper, seeded and minced
- 1 tablespoon chopped fresh cilantro
- 1/2 teaspoon grated lime rind
- 1 1/2 tablespoons fresh lime juice
- 1/2 teaspoon minced garlic
- Salt and pepper to taste
- 1. Stir together all ingredients. Cover and chill until ready to serve.
