Makes 3 cups
1 Granny Smith apple, diced
1 avocado, diced
1/2 cup diced red pepper
1/4 cup finely chopped red onion
1/2 jalapeño pepper, seeded and minced
1 tablespoon chopped fresh cilantro
1/2 teaspoon grated lime rind
1 1/2 tablespoons fresh lime juice
1/2 teaspoon minced garlic
Salt and pepper to taste
1. Stir together all ingredients. Cover and chill until ready to serve.
