Antipasto Salad

    Worthy of a Special Occasion

    Easy and tasty, yes. Quick and cheap, no. Overall I will give this 3 stars for deliciousness, but it seriously took me most of a Sunday morning to make this. And, just the cauliflower, olives, and artichokes cost $12, the remaining ingredients I luckily had on hand. I did skip the onion and had to substitute acorn squash for the pattypan squash. The one time I actually look for pattypan squash after seeing it in the store and not knowing what to do with it, and they don't have it.
