I bake a ot in the Fall, when the kids were little, I wanted to make pancakes. And my nerdy brain got off on a tangent researching the history of pancakes. I developed this version as a nod to the classic version. I make mine in my great grandmother's cast iron skillet.

- 2 cup(s) white cake mix
- 1 1/2 cup(s) Hungry Jack complete pancake mix
- 3 whole(s) eggs
- 1 1/2 cup(s) milk
- Mix all ingredients until smooth and cook on griddle like you usually would pancakes.
- I will drizzle slightly warmed icing over them or dust them with powdered sugar. The girls live them tinted pink with food coloring and sprinkled with candy confetti.
- I think I'll try doing a cinnamon roll variation next time by adding a little pumpkin pie spice to the mix and to the icing :)
