Anchovy Cheese Wafers

Yield Makes 5 dozen


  • 3 anchovy fillets
  • 1 small garlic clove, chopped
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 2 cups (8 ounces) shredded Cheddar cheese
  • 4 tablespoons butter, cut into pieces
  • 1/4 cup pitted kalamata olives
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons ice water

How to Make It

  1. Combine anchovies and garlic in a food processor; process until finely chopped. Add flour and next 3 ingredients; process until mixture resembles coarse meal. Add olives and parsley; pulse 3 or 4 times. Add ice water, 1 tablespoon at a time, and pulse just until dough forms. (If overprocessed, mixture will turn black from the olives.)

  2. Divide dough in half. Transfer each portion to a sheet of parchment paper or wax paper. Roll into logs 1 inch in diameter; chill 1 hour or until firm.

  3. Preheat oven to 400°. Slice dough into 1/4-inch slices, and place on an aluminum foil-lined baking sheet. Bake 12 minutes or until wafers are firm and edges are golden. Cool on wire racks.
