- 3 anchovy fillets
- 1 small garlic clove, chopped
- 1 cup all-purpose flour
- 1/4 teaspoon salt
- 2 cups (8 ounces) shredded Cheddar cheese
- 4 tablespoons butter, cut into pieces
- 1/4 cup pitted kalamata olives
- 1 tablespoon chopped fresh parsley
- 2 tablespoons ice water
How to Make It
Combine anchovies and garlic in a food processor; process until finely chopped. Add flour and next 3 ingredients; process until mixture resembles coarse meal. Add olives and parsley; pulse 3 or 4 times. Add ice water, 1 tablespoon at a time, and pulse just until dough forms. (If overprocessed, mixture will turn black from the olives.)
Divide dough in half. Transfer each portion to a sheet of parchment paper or wax paper. Roll into logs 1 inch in diameter; chill 1 hour or until firm.
Preheat oven to 400°. Slice dough into 1/4-inch slices, and place on an aluminum foil-lined baking sheet. Bake 12 minutes or until wafers are firm and edges are golden. Cool on wire racks.
