This smoky-sweet marinade is a Latin-inspired twist on our “Master Marinade.” We found it to be exceptionally delicious on chicken, but it would work great on a wide range of proteins. Flavored with fresh citrus juices and chili powder (ancho and chipotle, this marinade is approachable and offers familiar flavors, but is still sure to impress. Delivering such bold flavor, this marinade is the start to a truly “something special” dish.
1/2 bunch scallions, finely chopped (about 1 cup)
1/4 cup extra-virgin olive oil
1/4 cup canola oil
3 tablespoons fresh lime juice (from 2 limes)
2 tablespoons orange juice
2 tablespoons soy sauce
2 tablespoons amber agave nectar
2 tablespoons ancho chile powder
1 tablespoon ground chipotle chile
1/2 tablespoon chopped fresh oregano
How to Make It
1. Combine all ingredients in a large bowl, stirring with a whisk. Use as desired to marinate poultry, meat, or vegetables.
