Ingredients
- 2 can(s) Progresso black beans drain slightly
- 1 cup(s) onion chopped
- 1/2 green pepper chopped
- 3 cloves garlic minced
- 1/2 teaspoon(s) ground cumin
- 1/2 teaspoon(s) salt
- 1/4 teaspoon(s) pepper
- 1/2 teaspoon(s) hot cayenne pepper sauce
- 1 1/4 cup(s) canned diced tomatoes
- 2 1/2 cup(s) hot cooked rice
Preparation
- Coat a 4 qt sauce pan with cooking spray. Add onion, peppers and garlic and saute until tender. Add beans and tomatoes to the onion mixture and stir well. Add the remaining spices and hot sauce, stirring occasionally so that the mixture doesn't burn on the bottom, and simmer for 30 minutes. Add rice and mix well.
- Garnish with light shredded cheddar cheese and salsa, if desired.
