Alphabet Chicken Soup

Your toddler will love finding and recognizing letters in their soup. Look for whole-wheat alphabet pasta for added fiber and vitamins.

  • Yield: 10 adult servings (serving size: 1 cup)

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 2 carrots, chopped
  • 2 celery ribs, chopped
  • 2 garlic cloves, minced
  • 2 (32-ounce) containers fat-free, less-sodium chicken broth
  • 2 cups chopped cooked chicken
  • 1/4 teaspoon dried thyme
  • 1/2 cup uncooked alphabet-shaped pasta

Preparation

1. Heat oil in a Dutch oven over medium-high heat until hot. Add onion, carrot, and celery to pan. Sauté vegetables 5 minutes; add garlic, and sauté 1 minute or until vegetables are tender and mixture smells good. Stir in broth, chicken, and thyme. Bring to a boil; reduce heat, and simmer, stirring occasionally, 15 minutes. Stir in pasta, and cook 8 minutes or just until pasta is tender.
